We Found the Best Sourdough in Town

Good luck with that. That was my initial reaction when I read the DM from an unknown account asking if I’d be interested in trying some sourdough bread. Everyone and their toddler—and their guppy—got started with starters when COVID hit. Sourdough became proof that anyone can make bread.
But few can make a decent loaf; fewer still, an excellent one. Usually, this takes years of practice and repetition, and requires a deep knowledge of things like hydration point, gluten content, and optimal microbial conditions.
Something about that DM request made me reconsider my response. It might have been the chutzpah. Yes, lots of people make bread now, but how many are confident enough in their product to ask a food writer they don’t know to try it?
