The American Bearded Baker and His French Macarons
This native New Yorker has built his unassuming shop on perseverance and ingenuity.
Prior to 2015, Scott Krevat, the chef and owner behind The Bearded Baker in Boerum Hill, would have had a difficult time imagining he might one day own a shop that specializes in French macarons. He first tried the meringue-based confection at age 25, and it was love at first bite. Not only did he eat the entire box, but he became a man on a new professional mission. Instantly infatuated with the airy, chewy sandwich cookies, he was determined to try his hand at making them, despite having no previous baking experience. “Making macarons is amazing,” he says, while admitting that doing so did not come naturally.
